🍲 Cozy Chicken Fideo Soup Recipe 🇲🇽

A comforting Mexican classic full of flavor and perfect for any day! Save this one 💾

✨ Ingredients:
	•	1 whole chicken, cut into pieces (I prefer chicken breast but the whole chicken and bone give the soup amazing flavor)
	•	2.5 liters of water
 •	4 garlic cloves
	•	1/4 onion
	•	1 celery stalk
	•	Small bunch of parsley
	•	1/2 tsp Mexican oregano
	•	1 tbsp salt
	•	6 tomatoes
	•	1/4 onion (for sauce)
	•	4 onion slices (for frying)
	•	1/2 tsp whole cumin
	•	1/2 tsp chicken bouillon
	•	2 garlic cloves (for sauce)
	•	Small bunch of cilantro
	•	1/2 cup water
	•	Salt to taste

👩‍🍳 Directions:
	1.	Wash chicken thoroughly and place in a large pot with 2.5L of water.
	2.	Add garlic, onion, parsley, celery, oregano, and salt. Cook for 30 to 40mins on medium heat.
	3.	Using a blender, blend tomatoes, 2 garlic cloves, 1/4 onion, cumin, bouillon, and 1/2 cup water. Set aside.
	4.	In another pot, heat oil and fry onion slices. Add fideo noodles and toast until golden brown. (I skipped the frying part to save myself the calories but you can toast it without the oil if you’d like. This time I didn’t do either)
	5.	Add the tomato sauce into the pot where you sautéed the fideo. Stir and cook until the liquid is absorbed.
	6.	Add chicken broth and cilantro. Cover and simmer for about 10mins.
	7.	Next, add chicken pieces and 1/2 tsp salt. Simmer 5 more mins.
	8.	Turn off heat and serve warm 🌿

🥄 Tip: Tastes even better with a couple of avocado slices, a squeeze of lemon or lime and warm corn tortillas on the side!

Home decor is no easy feat, or at least for me it’s not anyway. However, the longer I put interest in refreshing our space, the more I feel the creative part of me begins to envision where I’d like my design to go.

It’s funny because originally, the things that inspired me are showing up completely different in our home but that’s ok. Perhaps, it’s because I’m working mostly with what we already have and a lot thrifted pieces (under $50 if possible).

A whole lot of painting will be happening very soon. So, we’ll see how that goes! But I will be very happy to share the process as it happens.
